Description: 15-019 Introduction to Culinary Arts

Bay Paths Culinary Art Instructors, Giacamo Armata and Marcie Wood, offer a comprehensive culinary arts program. During the program, students will learn how to properly handle a knife to make common cuts, such as dice and julienne, and use common hand tools found in the kitchen, like mandolins and ricers. The program will cover soup and stock making, including clear soup, chowders, consumes and cream soups. The five major mother sauces will be taught, and with them, several minor sauces from each. The seven major cooking methods will be taught, including: grill, sauté, poach, pan fry, braise, deep fry and bake. Whole fish and fowl will be broken down for use, as well as trimming meat in to steaks. Several dessert and pastry lessons, like doughnuts, pies and festive cookies, as well as pasta, bread and pizza making will be covered. There will be food to eat and bring home from every session, and at the completion of the course, each student will receive a book of all recipes covered and a certificate of completion.
Be aware that this course will use tree nuts, soy, eggs, milk, fish and shellfish, wheat and peanuts. Bring an apron if you wish, all other materials are provided. 28 classes/98 hours

Chef Armata a graduate of Johnson & Wales University with a degree in Culinary Arts as well as Baking & Pastry. He has worked in a variety of restaurants, institutional settings and most recently was running the kitchen as well as the catering at a restaurant in Natick, MA. Chef Armata has been teaching at Bay Path for six years.

Chef Wood has worked in the hospitality industry as a professional chef for 35 years, and is in her eighth year as a culinary arts instructor at Bay Path. Chef Wood is a Culinary Institute of America graduate, a member of the Joseph Donon Chapter of Les Amis DEscoffier Society and Advisor for the Bay Path High School Jr. American Culinary Federation.
